I have a simple and easy idea for eating healthier with out committing a bunch of time to meal prep. Do you want any of the following in a lunch?
Cheap
Simple
Tasty
Quick
Healthy
Well, I can give you an option that will give you all of these things, without taking hours of your time.
Ta-Dah! Jar meals!! (sorry, I am easily excited)
My wife and I took about 20 minutes to make breakfast for a week each and about the same time for lunches.
Okay folks, confession time. I am a huge junk food junkie, given the chance I will eat everything that is there in the house.
I get around this by prepping these meal jars. That way when I am ready to graze I have a healthy alternative.
Let’s get started.
For a meal sized salad I recommend using a quart sized jar. I use mason jars because I can veggies from my garden and I always have spare jars. I have bands and lids for this same reason or Ball sells plastic screw on lids that are dishwasher safe.
But, you can also use recycled jam or pickle jars just the same.

Start your stack, I suggest anything pickled or very wet to be near the bottom.
Work your way through, adding more ingredients as you go.
When the jar is filled place a lid on it and voila done.
You can either add a dressing to the salad now or fill a small container.

I found that these single serve ranch cups that fit under the lid band. I don’t use them often, but they are sealed and don’t need to be refrigerated, which is nifty on the go.
To eat, either pour into a bowl or enjoy right out of the Jar.
